The approach to NOŪS Santorini is an exercise in subtraction. Perched along the caldera rim in Imerovigli, the highest point of the island's western edge, the hotel distills Cycladic architecture into something both ancient and unmistakably contemporary. Whitewashed volumes carved into volcanic rock give way to clean geometric lines, open-air terraces, and an unobstructed panorama of the Aegean that stretches from the submerged crater to the silhouette of Thirassia. The palette is elemental: stone, plaster, linen, and light. Everything here is arranged around the view, and the view is extraordinary.
Accommodations span a collection of suites and cave-style rooms, many featuring private plunge pools, outdoor terraces, and interiors that pair raw natural textures with restrained minimalist design. Rough-hewn walls and vaulted ceilings nod to the island's traditional cave dwellings, while furnishings remain deliberately spare, letting the architecture and the landscape do the work. Some suites open directly onto the caldera, framing the water through wide glass or from the edge of a private pool. The effect is intimate without feeling small, designed without feeling decorated.
The hotel's public spaces follow the same philosophy. A swimming pool set against the caldera serves as the central gathering point, its infinity edge dissolving into the blue below. Breakfast is served with views that make the meal feel secondary, and the on-site dining offers Mediterranean-influenced dishes rooted in local produce and Santorinian culinary traditions. Evenings here tend to organize themselves around the sunset, which in Imerovigli arrives without the crowds that gather further south in Fira and Oia. The village itself is quiet, walkable, and connected to the island's cliffside trail that traces the caldera's edge between towns.
Santorini's identity is often reduced to its most photographed moments, but Imerovigli occupies a different register. It sits above the island's busier settlements, both literally and temperamentally. From NOŪS, the volcanic landscape feels close and immediate, the terraced cliffs falling sharply to the sea. The hotel's position grants a sense of remove that feels earned rather than manufactured. What stays with you is the particular quality of stillness here, the way mornings begin with nothing but light flooding white walls, and how the hours pass without urgency, measured only by the slow arc of the sun across the caldera.

What we love about this stay
There's a quietness to this place that feels earned rather than engineered — perched on the caldera's edge, it leans into Santorini's drama without competing with it. The design reads understated and chic, marble-cool underfoot, open archways that let the Aegean breeze do the work of making you feel unhurried. It's the kind of property where a private terrace and a glass of Assyrtiko at dusk isn't a curated moment but simply what the architecture invites. Mornings begin with Cycladic flavors done simply and well, and the spa feels like a genuine extension of the retreat's temperament rather than an add-on. What stays with you is the sense that the place doesn't oversell itself — it trusts the caldera view and the quality of its details to do the talking.
